Kyoto: Custom Japanese Knife-Making Workshop in Arashiyama

This could be yours. Assemble and sharpen your own Japanese knife — then take home a blade that cuts like this.

Master the traditional whetstone technique, guided step by step — a skill you'll take home for life.

Meet your blade. Learn the anatomy and craftsmanship behind authentic Japanese kitchen knives before you start sharpening.

The final test: slicing paper cleanly in mid-air shows your sharpening skills have paid off.

Paper-thin apple slices — proof of the razor-sharp edge you'll achieve with your own hands.
